To be fair, the NASA article didn’t explain that part much, either. I guess what’s happening is the smooth bottom side of the plane keeps the sonic boom that’s directed at the ground mild, while the more aggressive version of the sonic boom that we’re more accustomed to is directed upwards? I’m inferring here, of course.

Not a very good explanation. They take for granted that liquid will rush to fill the areas of the drop where evaporation is happening faster rather than the drop just shrinking in size. This really should have been part of the explanation, too.
